Ingredients

  • 8 slices thick-cut bread (brioche, Texas toast, or challah work best)
  • 3 large eggs
  • 3/4 cup milk (whole, 2%, or a dairy-free milk like almond or oat)
  • 2 tablespoons granulated sugar (or maple syrup)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • Pinch of salt
  • Cooking oil spray or melted butter (for the basket)
  • Optional cinnamon-sugar coating: 2 tablespoons sugar + 1/2 teaspoon cinnamon
  • To serve: Maple syrup, fresh berries, powdered sugar, or yogurt

Instructions

  • Prep the air fryer: Preheat to 375°F (190°C) for 3–5 minutes. Lightly spray the basket with oil or brush with melted butter.
  • Cut the bread: Slice each bread slice into 3–4 even sticks. Thicker sticks hold up better and stay custardy inside.
  • Make the custard: In a shallow dish, whisk eggs, milk, sugar, vanilla, cinnamon, nutmeg, and a pinch of salt until smooth.
  • Dip the sticks: Quickly dunk each stick in the custard, turning to coat. Don’t soak—about 3–5 seconds per side is enough, especially with soft bread.
  • Arrange in the basket: Lay the coated sticks in a single layer with a little space between them. Work in batches if needed.
  • Air fry: Cook for 6–8 minutes, flipping halfway through. Sticks are done when they’re golden and lightly crisp on the edges.
  • Optional coating: While still hot, lightly brush with melted butter and toss in cinnamon-sugar for a classic fair-style finish.
  • Serve warm: Plate with maple syrup, berries, or a dusting of powdered sugar. Enjoy right away for the best texture.
