Cut the bread: Slice each bread slice into 3–4 even sticks.
Thicker sticks hold up better and stay custardy inside.
Make the custard: In a shallow dish, whisk eggs, milk, sugar, vanilla, cinnamon, nutmeg, and a pinch of salt until smooth.
Dip the sticks: Quickly dunk each stick in the custard, turning to coat. Don’t soak—about 3–5 seconds per side is enough, especially with soft bread.
Arrange in the basket: Lay the coated sticks in a single layer with a little space between them. Work in batches if needed.
